Old York Cellars' Chef Recipes
~Red Onion Jam~
1 Fresh Bay Leaf
2 pounds of Organic Red Onions (Small Dice)
1 Bunch of Marjoram
¼ cup of champagne vinegar
1 cup of Old York Merlot
1 cup of Organic Honey
½ cup of Pine nut
1 tablespoon of Organic Brown Sugar
Sea Salt and Pepper to taste
Place all ingredients in a 3 qt stockpot and reduce until thick in consistency. About 20 minutes.
~Jersey Peach Cobbler with Old York Cellars' Peach Wine Sauce~
1/2 cup unsalted butter
1 cup all- purpose flour
2 cups sugar divided + 1/2 cup for peach sauce
1 tbsp baking powder
Pinch of salt
1 cup milk
4 cups fresh peaches
1 tbsp lemon juice
Grind cinnamon optional
1 Bottle Old York Cellars Peach Wine
Melt butter in a 9x9 baking dish
Combine flour, 1 cup sugar, baking powder and salt, add milk stirring just till dry ingredients are moistened.
Pour batter over butter (do not stir)
Bring remaining 1 cup sugar, peach slices, lemon juice to a boil over high heat, stirring constantly, pour over batter (do not stir) sprinkle with cinnamon. (If desired)
Bakery 375 for 40 to 45 minutes or unto golden brown serve warm or cold.
For sauce take 1 bottle Old York Cellars Peach Wine, add remaining 1/2 cup sugar and simmer until reduced to syrup consistency.
